Ingredients

  • Biscuit Base
    • Digestive biscuits (or graham crackers) – 200g (about 2 cups)
    • Unsalted butter, melted – 100g (1/2 cup)
  • Cheesecake Filling
    • Cream cheese, softened – 500g (2 cups)
    • Powdered sugar – 120g (1 cup)
    • Heavy cream – 240ml (1 cup)
    • Baileys Irish Cream – 80ml (1/3 cup)
  • Optional Ganache Topping
    • Dark chocolate – 100g (about 1 cup)
    • Additional Baileys – 1–2 tbsp (optional)

Instructions

  • Prepare the Biscuit Base:
    Crush the biscuits into fine crumbs and mix with melted butter until well combined. Press this mixture firmly into the base of a springform pan and refrigerate for 10–15 minutes to set.
  • Make the Cheesecake Filling:
    In a large bowl, beat softened cream cheese and powdered sugar until smooth. Gradually add Baileys and mix until incorporated. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  • Assemble the Cheesecake:
    Pour the Baileys filling over the chilled biscuit base and smooth the top. Refrigerate for at least 6 hours, ideally overnight, to set.
  • Optional Chocolate Ganache:
    Melt the chocolate with a splash of Baileys over low heat until smooth, then pour over the cheesecake and refrigerate to set.
